Nothing says thanks and love like chocolate, right? I thought I'd share the recipes in case you need to share some love too.
Sour Cream Chocolate Cupcakes
(both recipes adapted from 101 Gourmet Cupcakes by Wendy Paul)
I dark chocolate cake mix (really any flavor chocolate will work)
2 eggs
1/2 C. vegetable oil
1 C. sour cream
1 tsp. vanilla
Mix all ingredients together until well combined (2-3 minutes with electric mixer. Fill cupacke liners 2/3 full and bake 20 - 22 minutes at 350 degrees. I tested with a toothpick to see if they were done (original recipe said bake 15-18 minutes but mine took longer).
Cool 5 minutes in pan and then till cool on wire rack.
Chocolate Buttercream Frosting
1 stick butter at room temp.
1/3 C. cocoa powder
3 C. powdered sugar
1/4 C. milk
1 tsp. vanilla
cream butter with electric mixer till creamy then add cocoa, milk, vanilla and 1 C. powdered sugar - mix well. Then add remaining 2 C. powdered sugar and mix 2-3 minutes until creamy. Add more powdered sugar OR milk to thicken or thing frosting if needed.
This made a small batch of frosting and I ended up making another batch to get all my cupcakes frosted - this amount would probably be good for a 8x8 sized pan but otherwise I'll just go ahead and double it when I make it again.
